Okay, so this isn't an actual cheesecake but calling it a cheese fluff dessert isn't as appetizing. As far as I'm aware, this recipe came from my great grandmother in the early 1900's. Growing up out west, in a small farmhouse, she wanted a taste of the cosmopolitan life and tried to make a New York style cheesecake with pineapple. What came out has nearly zero connection to a New York style cheesecake but she never knew so it became a family staple. The filling is not set like a cheesecake and the end product is a lot softer and sweeter.

  1. Crust Mix Ingredients:
  2. 2 C Flour
  3. 1 Stick Butter, melted
  4. 3/4 C Dark Brown Sugar
  5. 1 C Walnuts, chopped
  6. Filling Ingredients
  7. 8 oz Cream Cheese
  8. 1 C Powdered Sugar
  9. 1 tsp Vanilla Extract
  10. 1 small can crushed Pineapple (drained)
  11. 2 1/2 C Sweet Whipped Cream

Steps to make Pineapple “Cheesecake”

  1. Preheat oven to 350 Deg. Mix all Crust ingredients together in a 9×13 pan. Once mixed, press mixture into pan bottom and sides, if needed. Bake in oven for 15 minutes. Remove from oven and let cool.
  2. In a mixing bowl, mix cream cheese and powdered sugar, adding sugar a little at a time, until it is fully incorporated and cream cheese is smooth.
  3. Add Pineapple and vanilla and lightly mix to incorporate.
  4. Fold whipped cream into pineapple cream cheese mixture, being sure not to over mix, but fully incorporate. Cover and Chill for 15 minutes.
  5. Use fork to break and crumble the crust in the 9×13 pan. Remove and reserve 1/3 of the crumbles. Spread remain crumbles evenly on the bottom of pan.
  6. Remove filling from refrigerator and use rubber spatula to spread evenly over crumbles in 9×13 pan.
  7. Use remaining 1/3 of crumble crust to sprinkle top of filling. Cover 9×13 pan and chill for at least 1 hour.
  8. Keep chilled until ready to serve. Makes 12 regular servings. Or, if you're like me, 2 servings. One for tonight and another for breakfast. 🙂
